What is Patsas?

Patsas (πατσάς) is a traditional Greek soup made from tripe and other parts of the pig or cow, slow-cooked to perfection and often served with vinegar and garlic. Once a humble dish for workers, it is now considered a comfort food with deep cultural roots.

More Than Just a Soup

In Greece, patsas is more than nourishment – it's a ritual. Shared in early morning hours after long nights, celebrated in local "patsatzidika", and believed to cure even the worst hangovers.

Where can I find the best Patsas?

The best Patsas can be found only in the neighborhoud of Thessaloniki, in Northern Greece. We, the 3 Archbishops of Patsas (aka the 3Gs) suggest that you visit Pantermos in Ampelokipoi, or Koukloutzas in Euosmos, or Tsarouchas in the center of Thessaloniki and order your "Patsas psilokommenos" along with lots of "Bukovo" (the red pepper) and lots of "Skordostoubi" sauce (garlic with vinegar).
